Graviera Vassilitsa is a kind of Greek yellow cheese. It is not to be confused with the Swiss cheese gruyère, which is a related cheese that in some languages has a name similar to Graviera.Both are cheeses with similar maturation process, however, they have a different taste and consistency as gruyere produced exclusively with sheep's or goat's milk and the Gruyères made with cow's milk. There are various kinds of graviera made in Greece, where it is the second most popular after feta cheese.
